Abstract

The study was conducted in the laboratories of the Department of Food Sciences at the College of Agriculture and the Animal House of the College of Veterinary Medicine, Tikrit University for the period from 15 April 2022 to 22 May 2022, with the aim of studying effect of quinoa extract on the level of blood sugar and kidney and liver functions of rats with type 2 diabetes. induced by Aloxan at a concentration of 100 mg / kg of weight, as (36) rats, aged between (2-3) months and weighing (86-103) g, were included, four rats were isolated from them as a healthy control group, and the remaining rats were injected with alloxan, and the rats were divided infected into seven groups, one of which was an untreated group (infected control group), while the rest were treated with different proportions of quinoa extract after the 30-day experiment. The biological study showed that the introduction of experimental diabetes mellitus with alloxan led to a significant (P > 0.05) and relative increase in the concentration of glucose, total cholesterol (TC) and triglycerides (TG) in the affected group, and when using a mixture of quinoa extract in different proportions, it led to a decrease in the concentration. Glucose, total cholesterol (TC), and triglycerides (TG), in induced diabetic rats treated with different percentages of quinoa extract with infected and untreated control group also increased high- density lipoprotein (HDL-C) concentrations in infected groups treated with different percentages of that extract.
